Coconut Macadamia Snowflakes

Ingredients
Yield: 2 dozen
  • 2 Egg Whites
  • Pinch Salt
  • 3/4 C Sugar
  • 1 1/2 C Shredded Coconut
  • 1 C Macademia Nuts, toasted & chopped
  • 2 T Lime Zest

Story

Mele kalikimaka is the thing to say about these cookies! These are a very light, sweet cookie made by folding coconut, macadamia nuts, and lime zest into a fresh meringue.  It’s like going to Hawaii for Christmas – not traditional, but still fun.  Take care to bake them until light golden, or they will be too soft to pick up.

Method:

Beat the egg whites and salt until frothy.  While beating, add the sugar in a slow stream and whip on high speed until stiff peaks form.

Fold in the remaining ingredients and scoop into 1 inch balls onto a greased baking sheet.

Bake at 350 degrees for 15 minutes or until golden.  Let cool, and if desired, drizzle with semisweet chocolate.
